Blueberry Balsamic Pork Chops

Blueberry Balsamic Pork Chops

Prep Time :25 Minutes Yield: 4 Servings

4 Bone-in Thick Cut Pork Chops
1 Cup Chicken Stock
1 Cup Fresh Blueberries
2 Minced Garlic Cloves
1 1/2 Teaspoons Thyme
1/4 Cup Balsamic
3 Tablespoons of Honey
4 Tablespoons of Butter
2 Tablespoons of Canola Oil

  1. Salt and Pepper pork chops and sear in a hot pan with canola oil and 2 tablespoons butter, brown both sides.
  2. Remove pork chops from pan and pour in the chicken broth and deglaze the pan.
  3. Add the garlic, thyme, balsamic vinegar, honey and salt and pepper to taste. Bring to a boil and reduce to simmer. Add blueberries and let simmer until it has reduced by half.
  4. Add the pork chops back in and let cook for about 5 minutes until the pork chops are 135 degrees.
  5. Turn off heat and remove pork chops, wait until the sauce stops boiling and add 2 tablespoons of butter and stir until melted.
  6. Pour 1/3 of the sauce over top of the pork chops, keeping the remaining sauce for guests to use as needed.  Let rest for 10 minutes and serve
