Fresh Strawberry Pie

Servings: 8

3/4 Cup Water
5 Cups Strawberries
3/4 Cup Sugar
3 Tbls Corn Starch
3 oz Strawberry Jello
2 tsp Lemon Juice
2 tsp Butter
1/2 Cup Ice Cubes
1 Baked Pie Crust

  1. Prepare pie shell and cool
  2. To make the filling add the water, sugar, cornstarch, strawberry jello and lemon juice into a large saucepan, bring to a boil and cook stirring the whole time for about 2 minutes or until the mixture is no longer cloudy looking, remove from heat and add butter. Stir until melted.
  3. Add ice cubes and stir until sauce cools and thickens.
  4. Pour the sauce (reserve 1/2 cup) over the strawberries stir to coat well and then pour the filling in the cooled pie crust, pop it in the fridge along with the extra for a minimum of 3 hours or overnight.
