Tomato Basil Bruschetta

Tomato Basil Bruschetta

Tomato Basil Bruschetta

3 Ripe Tomatoes
3 Tbls Balsamic Vinegar
2 Tbls Olive Oil 
10 Basil leaves
2 tsp Salt 
Pepper to Taste
1 Loaf of French Bread
Parmigiano-Reggiano Cheese
  1. Dice Tomatoes in small dice and add Salt, let set for 10 minutes or longer
  2. Add Balsamic, Olive Oil and basil
  3. Grate 1 garlic clove into bowl and mix. You may mince with knife if you want a milder taste.
  4. Slice Bread on diagonal about 1/2 inch thick.
  5. Place bread in a single layer on cooking sheet and drizzle with oil, salt one side.
  6. Place under broiler and flip after 4 to five minutes. Second side will only take 1 or 2 minutes. Watch the bread carefully as it will burn
  7.  Remove bread and rub with 1 garlic clove on the unsalted side
    Assemble:Top bread with tomato mixture and grate the parmigiano-reggiano cheese over top.

    Note: If you are not serving it right away put everything out for your guests to assemble with a picture of the finish product so they know how.
