Crab Cakes

8 oz lump crab meat
8 oz crab meat (any kind)
1/3 cup mayonnaise
1 1/3 cup panko
1 lemon zested
1 tablespoon lemon juice
1 tablespoon Old Bay Seasoning
1 tablespoon stone ground mustard
1 egg, beaten
3 tablespoons green onions or chives, Finely minced
1 tablespoons parsley, finely minced
Canola Oil
Old Bay Aioli
1/2 cup mayonnaise
half a lemon, zest and juice
1 tsp Dijon mustard
4 dashes Worcestershire 
1 clove garlic, finely minced or rasped
1 1/2 teaspoons Old Bay Seasoning

1) In a large bowl, combine 1/3 cup of panko bread crumbs and all the other ingredients, a touch of salt and pepper. Mix it all together very gently.

2) Form into patties and bread with the remainder cup of panko. Put in the refrigerator for a half hour.

3) Preheat the oil in a large skillet over medium-high heat.  You want about an inch of oil, Put the crab cakes in the oil.

4) Cook them for about 3 minutes on each side

5) Place them on a paper towel lined plate to cool for a few minutes while you make the sauce

    To make the sauce:

1) Combine the mayo, zest of the half lemon, juice of half of the lemon, garlic, old bay and salt and pepper.

2) Mix it all together and serve it with the crab cakes.
