Easter Caesar Deviled Eggs Three Ways

Time: 40 minutes
Servings: 4 to 6
  • 12 large eggs
  • 3 tablespoons mayonnaise*
  • 3 tablespoons Caesar dressing
  • 1 tablespoon white vinegar (if you do the dyed eggs you will need 1 tablespoon for each color on top of the vinegar for the filling)
  • 1 tablespoon mustard
  • salt to taste
  • 1 mini carrot
  • 24 black pepper corns (if you are doing just chicks)
*Egg yolks are different in sizes. you may need to adjust the amount of mayonnaise you put in the eggs so they aren't too moist.
  1. Place eggs in a medium sized pot and cover. Bring to a boil over medium heat and then remove off of the heat. Let set for 15 minutes. Drain the water out and peel the eggs as hot as you can stand, it makes it easier. The hotter the egg the easier to peel. Use older eggs versus fresh eggs.
  2. Prep your eggs. For the dyed eggs and the bunny footprint, cut the eggs in half. For the chicks cut them in a zig zag pattern a third of the way down on the smaller end. To get them to stand on the large end, slice off the bottom to flatten it out. Remove yolks from the egg.
  3. To mix the eggs add the vinegar and stir. Add in the mayonnaise and Caesar dressing stir. When you add the these two items please check for moisture level. The amount of yolk you get with each egg is not consistent so this is very important to use your judgement. Stir in the mustard and salt to taste.
  4. For the Bunny Footprint – Dye the yolk mixture pink and put in a piping bag with a size 10 tip. Fill the hollow of the egg yolk with the mixture, not going over the white. If this doesn’t come out smooth you may take your finger and dip in water and smooth out the pad of the foot. Then on the larger size of the white curve pipe three toes. I find the longer the egg the bigger the end surface is.
  5. For the Chicks – take the yellow filling fill a decorators bag with a piping 1M tip. (I have used a baggie but sometimes they break on me or the tip comes out so do it gingerly if using a baggie, if you don’t have tips just cut a hole in the bottom of the bad) Fill the large part of the egg with the filling and make sure to overfill, as this will be the “chick” then place the other piece of the egg white on the top. Add two peppercorns or capers for eyes. Take a 1/4 inch carrot disk and cut like a pie, making little triangles for the beak and place below the eyes.
  6. For the Dyed Eggs – Fill glass with a tablespoon of white wine vinegar add 6 drops of food coloring mix completely. Then add 1 cup of water. Do this for each color you want. Place egg whites in dye and let sit until the desired color you want. Fill eggs with the yolk mixture. You may dye the yolk also if you like. Happy Easter and God Bless!!!! He has risen!
