Fish and Chips

Prep Time: 10 minutes Cook Time: 40 minutes
Servings: 4-6
  • 2 pounds Cod (loins not filets)
  • 1 1/4 cup all purpose flour
  • 3/4 cups corn starch another 3/4 cups for dusting fish
  • 1/2 tablespoon baking powder
  • 1 1/2 cup seltzer water
  • 1 teaspoon salt
  • 1 tablespoon Old Bay Seasoning
  • 2 1/2 pounds russet potatoes
  • 8 to 10 cups of vegetable oil *depending on size of pot

Tartar Sauce

  • 3/4 cup mayonaise
  • 2 tablespoons of sweet pickle relish

Directions:

Cut off each side and both ends of the potato so it has flat sides and bottoms. cut in 1/4 inch thick. stack them and cut into 1/4 inch fries. Put potatoes into water, let set for 5 minutes

Put oil in a dutch oven. Take fries out of water and dry them. Place them in the cold oil bringing the oil up to 350 to 375 degrees, about 8 minutes. Fry them until they are a light golden color, about 15 minutes stir occasionally so they don’t stick. remove from pan with a spider and place on paper towels. Don’t salt! Skim off brown bits in the oil.

In a bowl whisk together flour, corn starch, salt, baking powder, old bay seasoning. Add in seltzer water and let rest 20 minutes

Cut the loins into 8 even pieces. Mix the remainder 3/4 cup of corn starch with a teaspoon of salt into a pie plate. Dredge each piece of fish dusting off extra corn starch.

Bring the oil back up to 375. Dip a piece of fish in the batter. Put the fish in the oil, swirl it around with tongs as you place the fish in the oil. (make it swim) Cook 3 or 4 pieces at a time, don’t overcrowd the oil. Move fish around gently occasionally so it doesn’t stick together. Cook for about 10 minutes until dark golden brown. Place on a plate with paper towel and continue cooking the fish in batches. Remove the crunchy nummies and place the fish on top of them. The is the perk of making it yourself, you get the ALL the crunchy nummies!

Return oil to 350 and place French fries back into the oil. Fry for 2 to 4 minutes to the golden color you prefer. Remove with a spider and place on a paper towel to catch the oil. Now you can salt your French fries.

Tartar sauce

Mix the Mayonnaise and the Sweet Pickle Relish together. Do not use hot dog relish!
