Granny’s Banana Cake with Seven Minute Frosting

Cake

  • 1 Box Classic Golden Butter Cake Mix
  • 1/3 cup softened butter
  • 3/4 cup milk
  • 3 eggs
  • 1 teaspoon vanilla
  • 6 bananas

Frosting

  • 2 cups sugar
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon salt
  • 3 egg white
  • 2 teaspoons vanilla
  1. In a bowl had cake mix, butter mix together. Then add milk, eggs and vanilla. Beat on low speed until all is moistened
  2. Spray with baking spray or butter and flour two 9 inch cake pans. Pour half the batter into each pan. Bake in a preheated 350 degree oven for 22 to 27 minutes, until toothpick comes out clean.
  3. Let cool in pan for 10 minutes and then turn out onto a wire rack and cool completely.
  4. When cake is cool cut cakes horizontally in half making four layers.
  5. Place the bottom layer on cake server cut side up and frost the cut side with frosting then slice bananas and place on top of the frosting. Place the other cake and continue for the next two layers.
  6. For the last layer place cut side down. Frost the whole outside of the cake. Enjoy!

Frosting Directions

  1. Put sugar, cream of tartar, salt, water, and egg whites in the top of a double boiler or a heat resistant bowl. Beat with a handheld electric mixer for 1 minute. Place pan over boiling water, being sure that boiling water does not touch the bottom of the top pan. (If this happens, it could cause your frosting to become grainy). Beat constantly on high speed with electric mixer for 7 minutes or until you have stiff peaks. Beat in vanilla. Let sit for 5 minutes and then frost the cake. This is also good on a chocolate cake!
