Herb Roasted Turkey

1 14 Pound Turkey
4 Sprigs of Rosemary
4 Sprigs of Thyme
4 Sprigs of Sage
1 Whole Head of Garlic, cut in half
1 Whole Onion, cut in half
1 Lemon, cut in half
1 Stick of Butter cut in planks
1/4 Olive Oil

1)Let turkey rest out of the fridge uncovered for 2 hours or dry the turkey on the outside completely

2) Preheat over to 325 degrees

3) Salt the inside of the turkey and the outside.

4 ) Loosen the skin on the breast by running hands underneath. Slide the butter planks under the skin of the turkey.

5) Stick the herbs inside the turkey at the bottom, then garlic, lemon and onions.

6) Tie the turkey up securing the wings and legs.

7) Rub Olive Oil all over the outside of the Turkey and ad about a cup of water into the bottom of the pan if you desire.

8) Put in the oven and cook until a thermometer reads 155 degrees in the breast and 165 in the thigh. Cover with foil and let rest for a half hour and then cut up.
