Hillbilly Soup Beans (Pinto Beans)

Hillbilly Soup Beans

Prep time: 10 minutes Cook time 3 hours
Servings: 6 - 8
  • 1 pound pinto beans
  • 1 diced onion
  • 2 cloves grated garlic
  • 1 smoked ham hock
  • 8 cups water
  • salt and pepper to taste (don’t add for the first hour and half)
  1. Clean beans by picking through and throwing away the bad ones. rinse through a sieve until water runs clean. Soak over night, but if you don’t have the time just add another hour or two onto the cook time.
  2. Rinse the soaked beans and place in a 6 quart pot. Add the onions, garlic, ham hock and water. Cover with a lid and put on medium high heat and bring to a boil. Then reduce the heat to a simmer. Cook for 3 hours. Half way through add your salt and pepper to taste, You don’t want to add at the beginning because it will make the beans tough. It is that easy. Beans will be done when soft and the juice is thick.Make yourself some fried potatoes and cornbread and enjoy!
