Mummy Meatloaf with Mashed Bootatoes and Sweet Bootato Pumpkins

Prep Time: 15 minutes 
Cook Time: 1 hour 30 minutes
Servings: 10
  • 2 pounds 90/10 ground Sirloin
  • 1 pound pork sausage
  • 1 cup Italian bread crumbs
  • 3/4 cup ketchup
  • 4 slices of bread soaked in 1/3 cup milk
  • 3 eggs, slightly beaten
  • 14.5 ounces petite diced tomatoes, drained well
  • 1 cup finely diced onions
  • 3 garlic cloves, minced
  • 24 sheets of Phyllo dough
  • 1/2 cup melted butter
  • 2 tablespoons butter
  • 1 tablespoon salt
  • 1 teaspoon pepper
  1. Saute onions in 2 tablespoons of butter until translucent then add garlic and cook for 1 more minute. Let cool
  2. Mix sirloin, sausage, bread crumbs, ketchup, milk soaked bread, eggs, tomatoes, sautéed onions and garlic, salt and pepper, thoroughly mix all ingredients until fully incorporated.
  3. On a rimmed cookie sheet place a rack on it. Place a sheet of parchment on the rack. Cover completely the parchment with sheets of phyllo dough 3 layers deep, overlapping them slightly. It will take two sheets end to end to envelope the meatloaf’s circumference and 3 sheets shingled from the top down, 18 sheets total
  4. Place the meatloaf on top of the phyllo dough and form into a mummy.
  5. Bring each sheet of parchment over the meatloaf, buttering between the top of each layer. It will take two sheets end to end to envelope the meatloaf making sure each layer is buttered as you fold it over. Then use a pizza cutter to cut strips of the remaining phyllo in 1 inch strips. Drape the strips all over the body using the butter to make them stick, there is no method to this, use your imagination on wrapping your mummy. When done brush one more time with butter.
  6. Bake at 350 degrees for 1 and a half hours until internal temperature is 160. If the phyllo dough gets too dark cover with foil. Bring out of the oven and let cool for a half hour. Have a Happy Halloween!!!
  • For the mashed bootatoes: https://www.justinthekitchen.com/creamy-mashed-potatoes/ put the potatoes in a Ziplock bag cut the end off the end, make it a large cut, about an inch and pipe them out. Place 2 black peppercorns for eyes
  • For the pumpkins: Roast 3 sweet potatoes until tender. Scoop out the insides into a bowl add 1/2 teaspoon cinnamon, 1/4 teaspoon of nutmeg, 1/4 teaspoon allspice, 1/4 teaspoon ginger, 1/4 teaspoon cloves and 2 tablespoons of maple syrup add a pinch of salt mix until smooth. Put filling into Ziplock bag, cut the end about an inch. Pipe into a ball. Take your moistened finger to help form into pumpkin. Take a tooth pick and make lines down the pumpkin. Top the pumpkin with a whole clove for a stem.
