Red Beans and Rice

Time: Active 30 Minutes Inactive: 2 hours 30 Minutes

1Lb Red Beans 
1lb Bacon
3 Tablespoons Bacon Grease
1 lb Smoked Sausage
2 Ham Hocks
1/2 Cup Ham, Diced
1 Large Onion, Diced
3 Stalks Celery, Diced
3 Bay Leaves
8 Cloves Garlic, Minced
1 Teaspoon Liquid Smoke, Hickory Flavored
2 Teaspoon Cajun Seasoning
1 Teaspoon Thyme
1 Teaspoon Paprika
1 Teaspoon Red Pepper
4 Green Onions, Sliced Thinly
7 Cups chicken Stock

2 Cups Uncooked Long grain Rice, rinse and drained
3 Cups Chicken Broth
2 Tablespoons Bacon Grease

1) Soak your red beans in water overnight.

2) Cut the bacon in inch pieces and cook. Set aside but save the bacon grease.

3) In a large pot heat the bacon grease and then add the onions, green pepper, celery, cook 
until the online is translucent then add garlic and cook for another minute

4) Add the Ham and brown, then add the smoked sausage and brown. 

5) Add in liquid smoke, paprika, Cajun seasoning, thyme, bay leaves and paprika cook for about
4 minutes

6) Add Beans with half 1 cup of water that they soaked in, chicken broth. Make sure the
liquid is 1 inch over the beans. Add in the ham hocks. cover and bring to a boil and reduce toa medium. Cook for 2 and 1/2 hours to three. The juice will be thick, if it gets too thick
add more broth or water.

Rice

1) Rinse rice until water runs clear. 

2) In a pot heat up 2 to 3 tablespoons of bacon grease. Add rice, sauté over medium heat until all the rice is coated.

3) Bring rice to a boil and cook until the most of the water is cooked out and the rice has 
bubbled at the time and made "holes" in the surface. Cover and cook for 20 to 25 minutes stir once. Don't stir too much or the rice will be gummy. 

Put the rice in a bowl and cover with the red beans. Sprinkle with green onions and bacon. Eat
and enjoy. Laissez les bons temps rouler!
