Traditional Stuffing with Sausage

  • 12 ounces of bread crumbs
  • 4 cups turkey or chicken stock
  • 2 sticks of butter
  • 8 oz sage sausage
  • 1 onion, finely diced
  • 3 celery stalks, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon rubbed sage
  • 1 teaspoon poultry seasoning
  • salt and pepper
  1. Preheat oven to 350
  2. Add to a large saute pan butter, onions, celery, poultry seasoning and sage. Saute over to medium heat. Season with salt and cook until it starts to become soft and are very aromatic. Remove from the pan and add the sausage and cook until the sausage is brown. Stir in the garlic and saute for another 1 toC 2 minutes remove from pan.
  3. Stir one cup of broth into the pan to deglaze.
  4. In a large bowl mix together the bread, onion and sausage mixtures. Add chicken stock and stir until the bread is very moist, actually wet. Taste to check for seasoning and season with salt and pepper, if needed. Transfer to a buttered 9 x 13 dish.
  5. Bake the stuffing until it is hot all the way through and is crusty on top, about 30 to 35 minutes. (if you make individual muffins, butter each individual cup in the muffin tin)

Cook’s Note: You may add apples, pears, if you do so add when you cook the onions. Toast walnuts and stir into stuffing mixture. Let your taste buds be your guide!
